Curry Pickles

8 cups sliced cukes
1 ½ Tbsp. kosher salt
Sliced sweet onion

Combine cukes and onions in a glass bowl.  Sprinkle on salt and toss to mix.  Cover and let sit over-night.  Rinse several times and drain well.  Taste the cukes to see how salty they are and add salt to the seasoning to taste.

Pack cukes into jars leaving some head space. Combine the rest of the ingredients in a pan and bring to a low boil.  Remove from heat and let cool a bit.  Pour over cukes and seal jars

1 tablespoon curry
½ tsp turmeric

½ tsp ground ginger
½ tsp crushed red pepper
1tsp mustard seed
2cloves crushed garlic
3 tsp sugar
1-2 tsp Kosher salt
2 cups water
1 cup vinegar
