Date Pin Wheel Cookies

For Filling

  • 1 tsp vanilla
  • 1 cup white sugar
  • 1 cup water
  • 2 ½ cups chopped dates
  • 1 cup chopped walnuts

Other Ingredients

  • 1 cup butter                                         
  • 2 cups brown sugar                            
  • 3 eggs                                                 
  • 4 cups flour                                         
  • ½ tsp soda                                           
  • ½ tsp salt

Cook the filling and cool completely.  Meanwhile, cream butter and brown sugar.  Add eggs and beat well.  Add dry ingredients and mix well.  Divide dough in half and roll out on wax paper sprinkled with flour in the shape of long rectangle.  Filling can be blended with a food processor if a smoother filling is desired. Spread filling on dough and roll up the long way.  You will have 2 long rolls as long as the cookie sheet.  Freeze the dough until it is stiff.  Slice into 1/4” or less slices.  Placed on  greased baking sheets and bake at 375F for 10-12 minutes.  Watch carefully and do not over bake.  Touch the dough lightly to see if it is set, but still soft. Makes approximately 4 dozen.

Christmas is the season for these cookies, but they are good anytime.  Real butter and black walnuts, if you can get them, are the secret to the best cookies.  They freeze well.
